Champagne and Watermelon Granata

Ingredients for your Champagne and Watermelon Granata
  • 4 cups watermelon – blended
  • 1 1/2 cups sparkling wine or rose
  • 2 to 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 4 to 6 fresh mint leaves, for garnish

 

Instructions for your Champagne and Watermelon Granata
  • In a mixing bowl, combine the wine and honey and stir until the sugar has dissolved; allow the bubbles time to settle. Add the blended watermelon, the lime juice and the lime zest to the bowl
  • Stir well
  • Pour the mixture into a baking dish
  • Freeze for 2 hours. Remove from the freezer and, using a fork, scrape the granita into flakes
  • Freeze for another 2 to 3 hours
  • Serve the granita in martini glasses, garnished with a mint leaf

 

Make your Granata kid-friendly
  • 4 cups watermelon blended
  • 5 pitted dates, blended with ½ a cup of water
  • 150ml coconut cream
  • 4 spoons honey

 

  • Whisk in the coconut cream & watermelon until smooth
  • Mix honey and date syrup together and add to watermelon mixture
  • Stir well and pour into a deep container
  • Freeze for two hours and remove, mix together well and freeze for another 2 hours until firm.
  • Serve in cones or cups
